Spinach and Cheese Pie


Spinach and Cheese Pie


Serves: 8


Ingredients:

  • 5 eggs
  • 2 tablespoons skim milk
  • 3 roasted garlic cloves, crushed
  • ¼ teaspoon lemon pepper
  • 1 dash salt
  • 1 large flour tortilla
  • 1½ cups shredded low-fat cheese
  • 3 cups fresh spinach
  • Non-fat cooking spray


Equipment:

  • Mixing bowl
  • Whisk
  • 9-inch glass pie pan


Directions:

Preheat oven to 375 degrees F.

Add eggs, milk, garlic, lemon pepper, and salt to a large bowl. Whisk until combined and set aside.

Lightly coat a 9-inch glass pie pan with non-fat cooking spray.

Place the flour tortilla in pie pan and press it down so it fits the shape of the pan.

Sprinkle half of the cheese onto the tortilla and spread evenly.

Add the spinach and the remaining cheese.

Pour the egg mixture over the cheese and spinach. Be careful not to spill any outside of the tortilla.

Bake 25-30 minutes, until the eggs are set.
