Cheddar Stuffed Tomatoes


Serves: 4


Ingredients:

For Cheddar Cheese Filling:

  • ½ cup low-fat sharp cheddar cheese, grated
  • ½ cup plain, low-fat yogurt
  • ½ tablespoon parsley, minced
  • ½ tablespoon cilantro, minced
  • ¼ teaspoon salt

For Stuffed Tomatoes:

  • 16 cherry tomatoes
  • ½ cup Cheddar Cheese Filling
  • 1 tablespoon parsley, minced


Equipment:

  • Mixing bowl
  • Plastic wrap


Directions:

Combine cheese, yogurt, parsley, cilantro, and salt. Cover with plastic wrap and place in the refrigerator for at least 1 hour.

When ready to serve, cut off tomato tops and scoop out the seeds.

Fill each tomato with 1 teaspoon of filling.

Sprinkle with parsley.
