Avocado and Spinach Salad


Avocado and Spinach Salad

Serves 4


Ingredients:

  • ¼ cup fresh lime juice
  • ½ teaspoon salt
  • 1 large garlic clove, minced
  • 3 scallions, thinly sliced
  • 2½ cups (or 4 small) tomatoes, diced
  • 1½ cups (or 2 medium) avocados, diced
  • 2 teaspoons extra virgin olive oil
  • ¼ teaspoon ground cumin
  • 6 cups fresh spinach
  • 1 cup (or 1 medium) cucumber, chopped
  • 2 tablespoons coarsely chopped cilantro     
  • Fresh ground pepper, to taste


Equipment:

  • 2 large bowls
  • Rubber spatula
  • Whisk


Directions:

Add half of the lime juice, salt, garlic, scallions, chopped tomato, and avocado in a large bowl. Gently combine and set aside.

Pour in olive oil, remaining lime juice, and cumin in another large bowl. Whisk together. Add the spinach and toss.

Separate the spinach onto 4 plates and top with ¼ of the avocado mixture. Garnish with cucumber, cilantro, and freshly ground black pepper.
